Lemon Cottage Cheese Pudding

Wash and zest a lemon. From that lemon, get 1 tablespoon of zest and 2 tablespoons of juice.

Blend 2 cups of cottage cheese in a blender or food processor. To the blended cottage cheese, add lemon juice, lemon zest, maple syrup, vanilla extract. Blend again to combine.

Taste and adjust the flavors to what you prefer. Pour mixture into individual serving cups or jars with lid. Chill for at least 2 hours. Serve cold and feel free to add some toppings like fresh blueberries!
