Servings: 1 Total Time: 20 mins Difficulty: Beginner
Enjoy them as a sandwich-style chaffle, open-faced melt, or even sliced into dippers for soups and salads. Add a dollop of sour cream, a sprinkle of fresh herbs, or a dash of hot sauce for an extra flavor boost.

If you’re looking for a quick, high-protein, low-carb meal that doesn’t skimp on flavor, these Chicken & Cheese Chaffles are about to become your new favorite. Made with crispy, golden cheese waffles (chaffles) and filled with tender, precooked seasoned chicken, this recipe is perfect for busy weeknights, meal prep, or a satisfying keto-friendly lunch.

Chicken and Cheese Chaffles

The smoky, slightly nutty flavor of gouda pairs beautifully with juicy, precooked seasoned chicken—making this recipe incredibly convenient without sacrificing taste. Because the chicken is already cooked and seasoned, you can have these chaffles ready in minutes.

Instructions

Preheat your mini waffle maker and spray it with cooking spray

  1. Your mini waffle maker needs to be HOT to get a good crispy crunch, so start heating it up before you mix your ingredients.

Mix your ingredients

  1. Mix all of the ingredients together.  Using a tablespoon, put two heaping dollops in the mini waffle maker, but don't over fill it! It will run over and make a mess!

It's hot

  1. Cook for about 8-10 minutes depending on how crispy you want your chaffle.  Be careful when checking for doneness, that mini waffle maker is HOT!

Enjoy!

  1. Carefully remove your chaffle.  You should have enough 'batter' to make two chaffles.  Let them cool before eating.  Get creative and top with more cheese, pickles or your favorite sauce!
