We have been waiting on snow! For three days now, we have hunkered down and waiting for the never-coming snow fall that the weathermen across the south said was going to be "DESTRUCTIVE". Now, don't get me wrong, I praise God that our power stayed on and that my friends and family were only inconvenienced. But something about cold weather and staying home for three days will make me want to EAT. So, I got myself ready to avoid the junk by having some healthy options on hand.
This carnivore donut is easy to make and helped me keep my cold weather snacking at bay. They are spongy and delicious. While they keep well in the fridge, they are definitely better served warm. Don't be afraid to pop them in the microwave for about 10 seconds before you enjoy the leftovers.
In a large mixing bowl, break and scramble four large eggs
Using a 1/2 cup scoop, start mixing in 2 cups of heavy cream powder. After each 1/2 cup scoop, mix in the powder. Be careful with the powder. It is very fine and will make a mess fast. Thay is why I did a little at a time.
Add 1 tablespoon each of allulose (or your zero calorie sweetner of choice) and cinnamon.
That's it-four ingredients! Make sure you scrape down the sides of your bowl well. You don't want any heavy cream powder left behind.
This dough is tacky and think. I do recommend using a piping bag or a non-pleated zip lock bag to pipe the dough into the donut ring mold.
Pop your donuts in a 400-degree oven for 8 minutes. I originally cooked them for 10 and they were slightly over cooked. Oven times may vary, so be sure to watch your donuts and find the perfect time for your oven.
In a small bowl, combine 3 tablespoons of whipped cream cheese and 1 tablespoon of honey. If you want it thinner, or sweeter, just add a little more honey.
When your donuts are done, you can ice them right away for more of a glazed effect. If you want the icing to stay in place, let them cool for about 5 minutes.
