California Turkey Casserole

Casseroles are so easy to make and to clean up the dishes after! It can get boring to have a casserole too often but not when you change the flavors. Think about it as a formula. Meat + veggies + cheese = dinner. Then plug in different ingredients to keep it interesting!

  1. Preheat your oven to 350 degrees.

  2. Prepare meat and veggies

Cut leftover turkey breast into bite size pieces.

  1. Shred 8-ounce block of mozzarella cheese.

  1. Microwave two bags of California blend vegetables.

  1. Make your cheese sauce

In a skillet, melt down 1/2 block of cream cheese. 1/2 cup of sour cream, 1/2 mayo, and 1/4 cup heavy cream.  As it comes together, add in seasoning (onion powder, garlic powder, and Italian seasoning blend.) When melted down, add garlic and shredded mozzarella.

  1. Add turkey and veggies to a large bowl and add cheese sauce.  Fold it all together making sure all of the ingredients are blended well.

  1. Bake it off!

Dump the contents of the bowl into a well-greased baking dish. Top with an additional 1/2 cup of shredded mozzarella and season with Italian seasoning blend.

  1. Cook for 30 minutes and broil for the last 4-5 minutes to get the cheese to brown and crisp.
