Taco Soup is a hearty, Tex-Mex–inspired soup that tastes like your favorite taco in a warm, comforting bowl. It’s typically made by simmering ground beef with onions, garlic, beans, corn, tomatoes, and taco seasoning, creating a rich, slightly spicy broth packed with bold flavor.

It’s a quick, one-pot meal that’s easy to prepare in a slow cooker. Because it uses pantry staples like canned beans and tomatoes, taco soup is popular for weeknight dinners, meal prep, and casual gatherings. The result is a comforting, flavorful dish that balances spice, heartiness, and freshness in every spoonful.

Stovetop then Crockpot

  1. In a skillet brown the ground beef and onion together. This is the point that I add taco seasoning.  You can use a prepackaged one but I chose to use a homemade blend that I got from Living Planet Friendly. It tastes so good! Definitely check her out because she has a lot of pantry and cantry mixes! 

Move to the Crockpot

  1. I like to open all the cans that I will be using at once.  But, don't forget that you only need to drain the beans and corn. Do not drain the tomatoes or tomatoes with chiles.  You will make up for the lack of moisture with beef broth, so add that in too.  All the spices were added with the taco seasoning, so you are good to go! 

  1. Let the crockpot go on high for 4 hours or low from 6 to 8.  Everything is already cooked so you are basically heating it through and letting the flavors meld together.

Note

Don't forget to top it! Shredded cheese, lime, sour cream or tortilla chips make great toppings!
